The fire

Oak, embers, and about four minutes.

There’s no gas line in the kitchen. Every plate that leaves the pass has been over wood, and the fire is built long before the first guest sits down.

Split

Oak is split by hand each morning and stacked to season in the oak niche beside the hearth.

Burn down

The fire is lit two hours before service and burned down to embers. Nothing is cooked over flame alone.

Cook over

The grate rises and falls by hand. Distance from the coals is the only temperature control we use.

The room

Sixteen seats at the counter, eight at the tables.

The counter faces the fire and the windows face the city, so dinner runs between the two — logs going in, the grate coming down, the skyline going blue behind it.
